Visit the places of taste

A good place to start exploring the flavours and aromas of Modena cuisine is where the ingredients themselves are sold, with the indoor food market in Modena, followed by the places of production: the cheese factories, where visitors can taste Parmigiano-Reggiano cheese, the vinegar factories where they can experience the unique flavour of smooth traditional balsamic vinegar and then the prosciutto plant and wineries, for a glass of good Lambrusco.

Visit the places of taste

Visit Albinelli Market

In the historical centre of Modena, just a stone’s throw from the cathedral, is the Albinelli indoor market, inaugurated in 1931, where you can buy all the local traditional produce. The market also serves aperitifs and has a calendar of tasting sessions.

Visit a vinegar factory that produces Aceto Balsamico Tradizionale di Modena DOP and/or Aceto Balsamico di Modena IGP

A visit to Modena is not complete without a trip to a vinegar factory to learn all about Modena vinegars! Aceto Balsamico Tradizionale di Modena DOP, which can only be sold after a minimum of 12 years’ ageing and is considered “extra mature” after a minimum of 25 years, is a product with deep roots in this area, a tradition passed down over the centuries. The only ingredient is cooked grape must, produced locally, aged in a ‘battery’ of barrels in different kinds of wood and subject to the traditional procedure of drawing off and topping up. For Aceto Balsamico di Modena IGP, in addition to the cooked must, wine vinegar and other ingredients are used, their quantities governed by a set of quality regulations. This variety sees more large-scale production and it is aged for a shorter period of time. In Spilamberto you can visit the Museum of Traditional Balsamic Vinegar, on the ground floor of Villa Fabriani, together with the Balsamic Vinegar Consortium factory.

Visit a cheese factory to learn all about Parmigiano-Reggiano DOP cheese

Watching the King of Cheeses being made is an experience that appeals to adults and children alike and this is why we recommend it to everyone. The Parmigiano-Reggiano cheese factories welcome visitors with tours showing master cheesemakers hard at work, following traditional procedures to turn milk into cheese. This is a special way to experience the production culture of this area and find out how one of the most important local products is made. In order to see the processing stages, you must make your visit around 8.30/9.30 in the morning.

Visit a winery to taste Lambrusco di Modena DOP

Lambrusco is the typical wine from Modena and it is produced in four DOP (PDO, protected denomination of origin) versions: Lambrusco di Sorbara, Lambrusco Grasparossa di Castelvetro, Lambrusco Salamino di Santa Croce and Lambrusco di Modena.

Visit a factory that makes Prosciutto di Modena DOP or cures meat

Visits can be booked to factories where you can learn about the various stages involved in production and taste the very high quality Prosciutto di Modena DOP. You can also visit meat curing factories where other local delicacies and sausage-like products are made, such as zampone and cotechino. In Castelnuovo Rangone you can visit the MUSA (The Charcuterie Museum)

Length of visit: 1 to 2 hours depending on the kind of company and product.

Price: some visits are free of charge, for others a ticket must be bought.

How to reach these companies: most of the factories are near Modena and in the province and can be reached either by private transport (car, motorbike or bike), on public transport or with organised tours using coaches or chauffeur-driven cars.
