The cotechino and zampone are two second courses of the Modena cuisine which are widely consumed, particularly during Christmas holidays. The zampone and the cotechino are the pork paw stuffed with finely ground meat of the pig itself. Usually they are accompanied with lentils.
The Cappello da prete, on the other hand, is a dish stuffed in the pork cheek and shaped to form a three-cornered hat.
A brief hystory on the origins of the product
The zampone was born in Mirandola where legend has it that in 1510-11, during the siege of Pope Giulio II , to better survive the difficulties and to prevent the animals that had been fattened up with such care from falling into the hands of the assailants, the Pico's cook ground the meat and stuffed it into the paw skin.
