Dishes and ingredients
Tortellini are a delectable composition of various types of meat-pork, beef, ham, mortadella-mixed together with eggs and Parmigiano Reggiano cheese and wrapped in freshly rolled egg pastry that has been cut in to small 3 cm squares.
The tortelli (also called "tortelloni") are also wrapped in egg pastry, but filed with ricotta cheese and Swiss chard (or spinach), chestnuts (in the mountains) and squash (in the low-lying plains).
