The menu follows the seasonality of raw materials, whose research focuses on the excellence of the same, while some dishes are and must always be present: the risotto creamy parmesan yarn balsamic vinegar and tortellini in capon broth, to name only historians. Also on Friday at lunch, a bit 'of time the focus was on fresh fish.
