Vinegar factories

Acetaia Pedroni

Guided visit to the production plant, from pressing the grapes through to ageing in casks in the family-run vinegar factories. The visit aims to explain not only the production process but also the cultural and traditional aspect of balsamic linked to our local area.

The visit ends with tasting of four Pedroni products: fruit preserve with Balsamic Vinegar from Modena PGI, aged Balsamic Vinegar from Modena PGI, refined Traditional Balsamic Vinegar from Modena PDO (12 years), and extra mature Traditional Balsamic Vinegar from Modena PDO (25 years).

The Pedroni family has been producing Traditional Balsamic Vinegar from Modena PDO since 1862. Today the sixth generation is continuing the tradition, managing production from the vines to the fine wooden casks.
