Traditional Balsamic Vinegar of Modena
Balsamic vinegar is part of the most ancient, authentic traditions of Modena and traces its roots to the XI century. It was certainly used by the Estensi Dukes as a "royal gift". Along many centuries, the production of balsamic vinegar (in the dry vinegar farms in the attics inherited from one generation to the next). was the prerogative of the large manors and humble families alike, destined for limited domestic use or, at most, a worthy gift.
The discussion on balsamic vinegar opened in great pomp in 1967: during the fair of San Giovanni, the city of Spilamberto launched a competition for the producers of natural balsamic vinegar. The interest grew and in 1969 the Consorteria dell'Aceto Balsamico Tradizionale (political association for traditional balsamic vinegar) was founded to promote and support initiatives aimed at the production and upgrading of traditional balsamic vinegar.
From the Consorteria, whose membership was mostly representative of "amateur" production, the next step was to the creation of the "Consorzio tra produttori di Aceto Balsamico Tradizionale di Modena" (Consortium of producers of Traditional Balsamic Vinegar of Modena) to protect quality.

It is made from the must of the characteristic grapes of Modena.
The grape must, cooked over a direct heat in an open vessel, simmers slowly and is concentrated until it is reduced to about one third of its original volume. It is then placed in the attic, in a series of casks of decreasing size and of different woods: oak, mulberry, chestnut, cherry and at times juniper. Here the balsamic vinegar passes the years acidifying, aging until it has reached a balance that only the alchemy of time can master, prodded along by the masterful hands of man who knows the ancient rules of the transfers and top ups.
The product is sold in two forms:
- Traditional Balsamic Vinegar of Modena (aged more than 12 years)
- Vintage Traditional Balsamic Vinegar of Modena (aged more than 25 years)
The unique characteristic of this vinegar is the fruit of the aging period that ranges from 12 to 25 years and even more.
