The new seat is the attic of Villa Benvenuti, surrounded by a beautiful park in the middle of the City Centre. The vinegar factory is dedicated to Francesco Aggazzotti, the first mayor of Formigine in United Italy, lawyer, agronomist and oenologist. Aggazzotti was born in 1811 in Colombaro, where he started a very high quality wine production. From his letter of 1862, the production specification for the protected designation of origin of Traditional Balsamic Vinegar was obtained.
