Acetaia Comunale di Modena

Guided tours in English at the municipal vinegar factory every Saturday at 2:30 PM.

This production houses 3 sets of barrels: two smaller sets, consisting of 6 barrels, which have been named after the two rivers flowing near the city, Secchia and Panaro, . The third set, consisting of 10 barrels, is named after the belltower, Torre Ghirlandina. Since 2015, the barrels are producing Traditional Balsamic Vinegar of Modena DOP, which indicates a product aged for a minimum of 12 years. Only after 2028 the sets will produce the second and more aged type of Tradional Balsamic Vinegar, called Extravecchio, aged for a minimum of 25 years.

The Acetaia Comunale houses also three big barrique barrels ("mother barrels") with a capacity of 100 and 200 liters, used to feed the sets, and several other objctes such as the traditional vases in clay used to preserve vinegar called Tragni.
