Acetaia Malpighi

Taste&Tour at Malpighi Vinegar House is an open-air museum where visitors can discover how Traditional Balsamic Vinegar is made while strolling among historic barrel batteries crafted from the finest woods—oak, chestnut, cherry, juniper, mulberry, and acacia. These precious barrels are home to one of Modena’s greatest treasures, a product that embodies patience, dedication, and tradition.

Thanks to the exhibition of working barrel batteries, visitors can learn about the traditional techniques of transferring and topping up the vinegar throughout its aging process.

The experience is enriched by a private collection of historical objects and documents preserved by the Malpighi family for five generations, including centuries-old wooden barrels dating back to the 16th century. The tour concludes with a vertical tasting of different Balsamic Vinegars, allowing guests to gradually train their palate to appreciate the many nuances and complexities of this extraordinary product.
