In the charming historic center of Spilamberto, home to the only museum dedicated to this outstanding food and wine excellence, the event celebrates the moment when Traditional Balsamic Vinegar of Modena PDO comes to life.

The highlight of the weekend will once again be the ritual of cooking the must in the open air, in the characteristic “paioli” (large copper cauldrons), slowly tended over a gentle flame by the masters of the Communities belonging to the Consorteria. Visitors will also be able to take part in guided balsamic vinegar tastings led by the masters of the Consorteria. Admission to the Traditional Balsamic Vinegar Museum will be free of charge. On Sunday, thanks to the participation of the Communities, the traditional market dedicated to the sale of cooked must will also take place.

Visitors will be able to watch the cooking of the must, known as the “boiling” , the most important and delicate phase in the production of balsamic vinegar, in the characteristic “paioli,” slowly tended by the masters of the Communities.
